I'm awesome because I can cook almost all my meals from scratch, then package them up in serving size portions to take to work all week - breakfast, lunch, and snacks.

It's easier than it sounds, really. But I admit that there's only me to deal with, so I know what I won't eat and I don't mind leftovers. Also it means I only have to cook 2-3x/week, since a standard recipe makes 4 servings.
